ABOUT Little Urban Homesteading sub-TRACK

You don’t have to live on a farm to use homesteading skills! Modern homesteading, backyard homesteading, and urban farming are all examples of what this can look like.

For the 2023-2024 School Year Program, we are partnering with experienced homesteading instructors and entrepreneurs to bring you this project-based Little Urban Homestead Sub-Track covering ages K-12th.

Each of our classes will have a specific project focus that students can work on during class and take home to finish (if needed). They will also leave inspired to make more of what they created in class at home!

Past Class Topics: Winter Sowing, Seed Starting, Cool Season Crops, Food Forests, Extending the Season, Warm Season Crops, No Dig Gardening / Building Healthy Soil, Maximizing Crop Yields, etc.

Meet our Instructor

Tiffany Peterson – Experienced Gardener, Homesteader & Passionate Educator

Hi, Fellow Gardening and Preserving Enthusiasts! My name is Tiffany Peterson and I am a proud homeschooling mom who loves anything and everything to do with gardening and and food preservation. Gardening has been a part of my life as long as I can remember. As a small child, my summers were spent pulling rows of weeds, stringing beans, shucking corn, and pulling off huge horn worms off the tomato plants. As soon as my husband, John, and I started our family, I knew that I wanted to have a huge garden just like I had growing up. For the past 10 years, my passion for gardening has grown immensely with each year. Over the years, I have devoured countless gardening books, podcasts, and YouTube shows. My biggest joy now is to share what I have learned with others so they can also create amazing gardens with an abundant amount of food for their families! This year my love has grown into food and garden preservation and I am so excited to share my passion for both with your families!!

The little Urban Homestead series

Description: Join us in this class series to learn how to live a more sustainable, self sufficient, and independent lifestyle through gardening, cooking, preserving, and making home-good products like salves and decor.

These are critical homesteading skills! Students will learn these skills, tips and tricks, and have the opportunity to get hands dirty - in the kitchen and in the dirt - through real-life learning opportunities! Each class will be a specific topic focus and related project. Leave inspired to try new homesteading and gardening skills back at home.

2023-2024 Class Topics: Harvesting; preserving and seed saving; water bath canning, pickling, kombucha, dried herbs and flowers, saving seeds, fall and holiday gifts, wellness / fermenting, etc.

Quarter 1: Class topics and descriptions

  • Exploring with Farm Fresh Bounty

  • Learning about the amazing herb basil; making bruschetta and saving tomato seeds

  • Diving into the herb dill, exploring and tasting different types of cucumbers; preserving with quick pickles, and saving cucumber seeds

  • Exploring the crazy world of the eggplant. Roasting eggplant and making Baba ganoush

Quarter 2:

  • Theme: Fall and Holiday Gifts

    • Pumpkin Breakfast Cookies (October 26), Fall Decor (November 2), Candles (November 9), Bath Salts (November 16), Christmas Decor (November 30), Dog Treats (December 7), Homemade Vanilla Extract & Christmas Treats (Dec 14)

Quarter 3:

  • Theme: Wellness / Fermenting

    • Elderberry Syrup (January 11), Fire Cider (Jan 18), Bath Teas & Salts (January 25), Healing Salves (February 1), Kefir (February 8), Sauerkraut (February 15), Kombucha (February 29)

Quarter 4: Class topics and descriptions

  • Theme: Gardening

    • Plants Needs (March 7), Extending Season with Mini Greenhouses (March 14), Stretching for Sunlight (March 28th), Soil Ecosystem (April 4), Plant Botany (April 11), Pollinator Power (April 18), Warm Season Crops (April 25), Field Trip: Peterson Urban Farm (May 2nd - 5 min away from True North flagship Littleton location)

Requirement: For students under the age of 13, parent participation required.

Dates: Classes offered as “A La Carte” Quarterly, 7-Week Packages

  • Quarter 1: August 24 - October 12

  • Quarter 2: October 26 - December 14

  • Quarter 3: January 11 - February 29

  • Quarter 4: March 7 - May 9

Time: Thursday afternoons from 12:10-1:25pm

Cost Per Quarter (7-Weeks): $50 per student

Age Range: K-12th grade

Drop-Off (Yes/No): No. Parents will be participating in the classes (if under 13 years old).

2023-2024 Program: We will be running this as 7-week quarterly “a la carte” packages on Thursday afternoons.

Location: True North flagship Littleton location
